I love my Misto because it makes a great alternative to nonstick spray without extra chemicals! I often use it to spray my crockpot and sheet pan to help things not stick. Add the oil and give it a couple of pumps, and the olive oil will spray.(Amazon has amazing options -> here)

Mushy veggies are also often the result of overcooking. When the interior is loaded with moisture, you have to cook it for much longer to evaporate all of the water and avoid the interior having the unappealing, spongy, raw texture that eggplant and zucchini are notorious for.

Should squash be cut side up or down in the oven? ›

You can eat the skin, so there's no need to peel it. Simply halve it, scoop out the seeds and chop it into chunks, then roast it and add it to a warm winter salad or throw it into curries, stews or soups. You can also roast the seeds and eat them as a snack or sprinkled over a finished dish.

What is the temp range for squash? ›

Squashes grow best in air temperatures ranging from 60° to 75°F (16-24°C); established fruit will ripen in temperatures as high as 100°F (37°C) but flowers will drop in high temperatures. Squashes are warm-season crops and very sensitive to cold and frost.
