This vibrant beetroot smoothie with added kale is so easy to make – simply pop all the ingredients into a power blender and whizz and go. A nutrition packed power breakfast! Delicious with earthy notes and a vibrant colour from the beetroot. Vegan, Whole 30 and Paleo Friendly.

Beetroot Smoothie

This beetroot smoothie contains your 5 a day in one glass, the beetroot gives a stunning purple, which proves that green smoothies do not need to be green in colour! The green means that the smoothie contains some greens! Do not be put off by the kale, you really cannot taste it: if the thought of kale for breakfast is too much just swap in a handful of spinach.

How do I prepare beetroot for a smoothie?

Simply top and tail raw beetroot, peel with a regular potato peeler, cut into chunks and pop into the blender.

Can I make a beetroot smoothie with a regular blender?

Depending on the power of your blender then absolutely yes, although the results may not be a silky smooth as with a power blender.

To make a beetroot smoothie in a regular blender you may find it easier to use cooked beetroot – use the ones that come shrink wrapped in plastic from the supermarket – never pickled as that would be horrible!

Also you can use spinach in place of the kale – either fresh (either chop or cut it up a bit first) or frozen. When using frozen spinach for a smoothie defrost it in the fridge overnight and give it a really good squeeze before adding to the blender.

Can I make a beetroot smoothie with milk or yogurt?

Absolutely! Use the liquid of your choice. Dairy milk, soy milk, nut milk etc, yogurt or kefir.

What goes well with beets in a smoothie?

There are so many variations! If your beetroot come with the beet greens then add them. Beetroot and celery, beetroot and carrot, beetroot and ginger are all delicious combinations. If you don’t have fresh beetroot you an also use beetroot powder – which is also an excellent substitution to use in a regular blender.

You can make this beetroot smoothie more filling and substantial by adding a few spoons of oats.

Healthy Green Beetroot Smoothie {Vegan, Whole 30, Paleo}

Ingredients

  • 200 ml apple juice ((or water, yogurt or milk))
  • 2 frozen banana ((peel and chop before freezing))
  • 1 tbs linseed or flax seeds
  • 1 beetroot ((peeled and roughly chopped))
  • 50 g Kale
  • 100 g Mixed berries ((I like to use frozen))

Instructions

  • Place all the ingredients into the jug of a high powered blender and whizz until smooth.

  • Serve immediately

Notes

  • A generous handful of kale weights about 25g.
  • To make in a regular blender use cooked beetroot (not pickled!)
  • Experiment with using different flavours and ingredients. Try adding carrot, ginger or celery.
  • Make it with your choice of milk, kefir or yogurt.
  • Make more substantial with a few spoonfuls of oats.
  • This recipe is 10 Weight Watchers Smart Points per portion

    love the smoothie. I do like beetroot – when tempered in such a fruity fashion – in smoothies. My fave is ABC (apple beet and carrot)

    That sounds amazing Helen. I really must try adding kale and frozen fruit. I have only added fresh fruit up until now. I have a tub of mixed linseeds and flax seeds, which I add to wee Cooper’s porridge in the morning and I have started adding it to smoothies too.

    I’m embarrassed to say I had no idea a beetroot looked like that, I’ve only ever seen one when already peeled! These are some great suggestions and beetroot isn’t something I usually pick up so I will try these x

    Can you advise a general weight associated with one beet? I am using roasted that have been chopped. Would be great to have a bit of a guidance point. Thank you!

      Hi Jodi,

      it really depends on the size of the beetroot – as they vary massively. I’d go for one about the size of a regular apple, you can add a little more apple juice, even yoghurt if needed to thin.
